SAN VALLE CACHAÇAS

Nature has gifted Ceará Mirim with its fertile and green valley and its lagoons between dunes. The nostalgia for a glorious past in the old mills of the valley and the well-being in these lagoons and dunes complement each other, forming a new tourism of the present.

The city of Natal was contemplated with the Pitimbu Valley and its sheets of drinking water under dunes, saved by the modern city park whose symbol has an eye on preservation.

The VALE VERDE mill pays tribute to these gifts of nature, naming its cachaça SAN VALLE and seeks its quality inspired by this alliance between the tradition of the past and the innovation of the present, in the abundance of sugar cane, sun and water and, above all, valuing good practices at all stages of production.

Fermentation, made only with selected sugarcane juice and produced in-house, uses the traditional and natural country ferment, but adopts academic procedures and equipment with innovative systems of temperature control, aeration and rigorous asepsis, essential for a quality cachaça.

​

Distillation is done in the traditional copper still, provided with innovative techniques such as heating the cane juice wine by boiler. Dishes and dephlegmator make a triple backflow in evaporation and condensation. This means a triple distillation, allowing greater control of the distillation, slowly conducted and consequent selection of the best cachaça components. The careful and traditional separation system is added, taking advantage of only the most noble part of the spirit, the heart.

The head cachaça is intended for other purposes, useful in preserving quality, such as the use in the asepsis of all equipment, especially milling, fermentation and filling.

Storage is in the traditional wooden barrel and its standardization is an innovative BLEND, carefully researched and designed to bring out the best of oak, umburana and cinnamon laurel, resulting in more complex, harmonic and unique flavors and aromas. This is the SAN VALLE cachaça.

With its 21% alcoholic degree, Cravo e Canela brings together a combination of flavors that pleases the most diverse tastes. Its freshness makes it an excellent choice for barbecues and parties.
